A really yummy healthy recipe, good for lunch or dinner:
Ingredients:
Tortillas or wraps
3 chicken breasts, cooked and shredded
One ripe avacado
Shredded cheese
Lemon juice
Lite Mayo or salad dressing
One can of chick peas (garbanzo beans)
These are really easy to make if your chicken is already cooked. Core the avacado and scoop into a bowl. Add about 1/2 the can of chick peas (save the rest for later and make hummus dip) and mash with a fork or potato masher. Season with s&p and a generous squirt of lemon juice. In a separate bowl, sprinkle chicken generously with s&p, about an 1/8 teapoon each of onion powder, garlic powder, cumin, and either chili powder or Old Bay seasoning. Add mayo until well moistened. You may add crumbled bacon or bacon bits to the chicken mixture of you like. From there its all assembly: Spread a generous amount of the avacado/bean mixture on your tortilla and top with the chicken mixture. Then add the toppings of your choice: Lettuce, tomato, shredded carrots, red or green onion, ect.
Serve with fruit salad or apple slices for a light dinner. Enjoy!
